Cabbage indian recipe

The cabbage stir-fry is an Indian-inspired dish served as a side dish, also known as Patta Gobi and Subzi. The recipe is a spicy mixture of cumin seeds and ground turmeric. The soft-cooked cabbage is seasoned with chili. I love adding the soaked mung dal to the dish to give it a rich and crunchy bite and provide protein. Instant Pot Recipe

Although you don’t require a pressure cooker to cook Cabbage, I often use it since it makes cleanup simple. In the past few times I shared this on my Instagram stories, many people asked for the exact recipe. This is the recipe!

The Instant Pot is set to saute and warm oil. Add cumin seeds, and let them melt. Press Cancel to shut off Saute mode. Then stir with turmeric and red chili powder, salt, and cabbage. Add the water and place the dal that has been soaked over it. Don’t mix since the dal could get stuck to the base of the pan. Close the lid and set the cooking time to one minute, followed by a rapid release. Close the lid and press cancel—instant Pot. Mix well, then add cilantro to the mix.

Stove Top Recipe

In a large non-stick pan cook oil in a large nonstick pan. Then add the cumin seeds, and let them smoke. Add red chili powder, cabbage, and salt and soak in mung daal. Mix well, and cook by a lid for 5 minutes over moderate temperature. After 5 minutes, taste and see if the texture is healthy, switch off the heat, and enjoy the cabbage. If you prefer the softness of the cooked cabbage, mix it well and cook it covered for 5 minutes more.

Serving

From preparation to cooking, the dish can be prepared within 20 minutes. It is a great accompaniment dish for serving. I love doing the dish with rice and the Parathas for a meal with rice and dal or khichdi.

Variations

The cabbage is cut finely in India, and the sabzi is soft-cooked. However, you can cut the cabbage into small pieces or cook it to a point where it has a slightly chewy texture and crunch.

You can skip using the Red chili powder from this recipe or substitute it for crushed green chili. Use the chili more or less based on your preference for spice.

This recipe is also compatible with savoy cabbage, red/purple, or savoy.

Prep cabbage

Slice the head of cabbage into two halves. Take one half, and place it flat side facing downwards on the cutting board. Then thinly cut lengthwise into strips. Then, cut init half. Cut about 6 cups of cabbage.

Instant Pot Recipe

Set the Instant Pot on saute mode, and then heat the oil. Add cumin seeds, and let them sizzle. Switch off. Saute off. Add turmeric as well as red chili powder and cabbage. Mix in salt. Add water and then layer the dal that has been soaked over it. DO NOT mix, as the dal may be stuck to the bottom of the pot.

Cover the pot and let it cook for one minute, followed by a quick release. Then, press cancels to open the Instant Pot. Mix well, and decorate with cilantro.

Stove Top Recipe

In a large, nonstick pot, cook oil in a large nonstick pan. Add cumin seeds, and let them sizzle. Add red chili powder, cabbage, salt, and soaked Mung Dal. Mix well, and cook with a lid for 5 minutes over moderate heat.

After 5 minutes, taste and see if the texture suits you; turn off the flame and take a bite of the cabbage. If you prefer the softness of the cooked cabbage, stir it well, then cook it covered for 5 minutes.

Cabbage Stir Fry Variations:

In India, it is common to chop the cabbage finely and sabzi cooked. However, you can cut the cabbage into small pieces or cook it to leave it with a bit of crunch and bite.

The red chili powder used in this recipe could be substituted with chopped green chili. Use more or less, based on the spice you prefer.
