TURKEY CHILI SMOTHERED SWEET POTATOES

Chili and sweet potatoes are a perfect match. The chili’s spicy, smoky flavor is perfectly balanced by the subtle sweetness of sweet potatoes. The perfect trio is complete with a little cream cheese. This Turkey Chili Smothered Sweet potato recipe is easy and delicious. It’s great for meal prep.

CAN I USE BEEF INSIDE?

Absolutely! This recipe uses half of my basic Homemade Chili recipe. It is very customizable. You can change the protein, adjust the heat (or eliminate it), and add fun ingredients like cocoa powder.

MAKE THEM VEGETARIAN

You can swap the 1/2 lb. You can substitute 1/2 lb. of ground turkey with a can of black beans or kidney beans to make a delicious vegetarian chili that you can serve with sweet potatoes. 🙂

MEAL PREP THE STUFFED SWEET POTATOES

Once you have filled your sweet potatoes with cheese and chili, pack them in a microwave-safe container. Microwave the sweet potatoes on high for 2 minutes or until they are heated through.

Baked sweet potatoes are smothered in turkey chili and then topped with cheddar. Turkey Chili Smothered Sweet potatoes are a quick and easy meal!

INGREDIENTS

CHILI

  • 1 Tbsp olive oil ($0.16)
  • 1/2 lb. Ground turkey ($2.00
  • 1 yellow onion (0.32)
  • 2 cloves of garlic ($0.16)
  • 1 15oz. can diced tomatoes ($0.59)
  • 3 oz. tomato paste (1/2 cup) can) ($0.25)
  • 1 15oz. 1 15oz.
  • 1 Tbsp chili powder ($0.30)
  • 1/2 tsp dried Oregano ($0.05).
  • 1/2 tsp ground cumin ($0.05
  • 1 cup of water (0.00)
  • 1/2 tsp salt ($0.02)

POTATOES & TOPPINGS

  • 4 small sweet potatoes (3/4lb. each) ($3.94)
  • 1/2 cup shredded cheddar cheese ($0.43)
  • Garnish with green onions or cilantro ($0.25)

INSTRUCTIONS

  • Pre-heat the oven to 400oF. After washing the sweet potatoes, use a fork to poke the skins several more times. Bake the sweet potatoes for 60 minutes or until they are softened from the fork holes.
  • While the sweet potatoes bake, make a small batch of chili. In a large saucepan, heat the olive oil and ground turkey. Cook the turkey on medium heat. While the turkey cooks, chop the yellow onion and mince garlic. Continue to saute the garlic and onions in the pot until they become soft and translucent.
  • Add the beans to the pot with the tomato paste, juices, diced tomatoes, chili powder, Oregano and cumin. Mix well. Let the chili heat to a simmer. Once the chili has boiled, reduce the heat to low and simmer for about 20 minutes. Stir occasionally. Salt to taste.
  • After the sweet potatoes have been baked, cut each one half lengthwise, then mash the insides. Spread 3/4 cup chili on each potato and top it with 2 Tbsp shredded cheese. To melt the cheese, return the potatoes to the oven and bake for about a minute. Just before serving, garnish with chopped green onions or cilantro.
