BAKED SWEET POTATO FRIES WITH PEANUT LIME DRESSING

This may be the best thing I have ever eaten. The combination was a chance discovery. I happened to have leftover Peanut Lime dressing and some random sweet potatoes in my pantry. This must have been divine intervention. I now have to share these Baked Sweet Potato Fries with Peanut Lime Dressing with the rest of the globe, as everyone deserves this delicious food pleasure.

They are sweet, savory and spicy. These Baked Sweet Potato Fries With Peanut Lime Dressing are a great way to satisfy all your flavor cravings.

ARE THESE BAKED SWEET POTATO “FRIES” CRISPY?

Nope. This is not how baked sweet potatoes are. No matter what tips or tricks you use (cornstarch oil, oil, etc.), baked sweet potatoes won’t be crispy like deep-fried sweet potatoes. These “fries” will not disappoint as long as they are understood before you go! They are so good that you will forget everything else once you have tried them.

MAKE IT A MEAL

This recipe makes enough for me to eat 2 servings and still be satisfied. But this is a perfect choice if you want something more substantial, such as grilled chicken breast or fried tofu. These fries are so delicious that you won’t be able to find anything else.

If you make a whole batch, you will have enough to drizzle over chicken or tofu. This is what I did because I had some chicken that needed cooking, and it was delicious. You can also make Cilantro-Lime Chicken, as you have cilantro and limes. Boom.

BAKED SWEET POTATO FRIES WITH PEANUT LIME DRESSING

Sweet potato fries baked in the oven, drizzled with homemade peanut sauce dressing. Topped with fresh cilantro, chopped peanuts and a pinch of spicy red pepper.

Cooking Time: 30 minutes

Total Time: 40 minutes

INGREDIENTS

PEANUT LIME DRESSING

  • 1.5 Tbsp peanut butter in natural style ($0.11)
  • 1/2 cup brown sugar ($0.02)
  • 1 clove of minced garlic
  • 1/4 tsp grated fresh Ginger ($0.05
  • One lime ($0.50).
  • 1 tsp soy sauce ($0.04)
  • 2 Tbsp neutral oil* ($0.41)

BAKED SWEET POTATO FRIES

  • 1 sweet potato (about 1 lb.) ($1.29)
  • 1 Tbsp of cooking oil ($0.20).
  • 1 pinch of salt ($0.01)

TOPPINGS

  • 1 handful of fresh cilantro ($0.38)
  • 1/4 cup peanuts ($0.12)
  • 1 teaspoon crushed red pepper ($0.02)

INSTRUCTIONS

  • Pre-heat the oven to 425oF. The sweet potato should be peeled and cut into fries of 1/2 inch.
  • Spread a little oil on a large baking sheet. Then, spread it all over the baking sheet. Then add the sweet potato fries. Finally, drizzle the remaining 1 Tbsp oil on top. Toss the sweet potato in the oil until fully coated. Sprinkle with salt.
  • Bake the sweet potatoes for 20 minutes in the oven. Bake the sweet potatoes for 20 minutes. Once they are done, remove them from the oven and stir them to ensure that every piece is turned.
  • The peanut lime dressing can be made while the sweet potato fries bake. Combine the peanut butter with brown sugar, minced Ginger, oil, 1 Tbsp lime juice, soy sauce, and grated Ginger in a bowl. Mix the ingredients until smooth.
  • Chop the fresh cilantro and peanuts.
  • After the sweet potatoes are baked, divide them among two plates. Spread the peanut lime dressing on top. Finish with a generous amount of chopped cilantro, peanuts, and red pepper flakes. Serve immediately

NOTES

*Neutral oils are light-colored oils without strong flavors. Oils like canola (untoasted), peanut, grape seed and avocado.
